Dad Turns 56
My Dad’s birthday was on Monday, January 9, 2012. Just a simple birthday celebration at home.
Dad made noodle soup for lunch.
My sister was still asleep from her trip to Vegas since she didn’t get any rest the night before.
When my dad went to the gym I started making my favorite coconut cupcakes with coconut whipped cream that I’ve made before. Thanks to my mom for picking up a can of coconut milk and cream at the supermarket! Wouldn’t have been able to make these cupcakes without those key ingredients.
I used cake flour this time around since we actually had it at home. The result was a much more dense and fluffy cupcake. I think I still liked the light fluffy ones I made previously by adding more butter though. Although this was much more healthier, which is what my dad would have wanted.

My mom bought duck and bun rieu from the supermarket and a vietnamese restaurant since she didn’t have time to cook something at home.

Added coconut whipped cream and some toasted coconut flakes to finish the cupcakes off.
Thankfully my dad really liked the cupcakes! Apparently both my mom and dad really favored the coconut whipped cream I made as it tasted fresh as opposed to normal vanilla whipped cream.
