Cupkates

Friday, March 30, 2012. My love for this food truck just grew even larger.

Continuing off of my previous post, this was our dessert at Off the Grid. My first experience with this place was at another off the grid, which I blogged about as well. 

This time around though, we got to sit down, and let all of the flavors slowly sink in instead of eating it standing up in the rain.

My sister got the Churro, I got the Lemon Meringue, and the Gingerbread was for my sister’s friend.

No cupcake dividers! Leading to a slight accident with the cupcake my sister was giving to someone. Whoops.

Me with my cupcake! I am so excited! I’ve made lemon meringue pie before, and it’s definitely one of my favorites! And now it’s in cupcake form!

While unraveling the cupcake liner, I discovered a crusted graham bottom! THIS CUPCAKE WAS AMAZING. Meringue on the top, slightly burnt with toasted coconut, lemon curd filling on the inside, moist lemon cake, and graham pie crust? Talk about the most amazing cupcake ever! Ingeniously incorporated all of the wonderful aspects of a lemon meringue pie. This truly was a Lemon Meringue Cupcake!

Churro Cupcake with Dulce De Leche filling. Ridiculously delicious as well! I just don’t know how they make their cupcakes so awesome! Such rich textures and nothing is overly sweet! Just a tad bit of sweetness. My goodness, I wish I could get one here in San Jose.

Now I shall sit here thinking about how the cupcake tasted and wishing I had one in front of me. This is what blogging about a delicious food item does to me. I am so hungry. Hungry for a Cupkates cupcake.

I highly, highly recommend you try a cupcake from this food truck. Track it down. You won’t regret it.
