Artichoke Chicken Pasta
Monday, August 6, 2012. A simple quick lunch.
I convinced my dad to buy me one of those jars of artichoke hearts from Costco that I find absolutely delicious! The oil that it’s in also is an added bonus since it can be like a dressing or used for cooking.
What I did: Cooked the pasta, hand shredded in leftover chicken, then added in the artichokes and oil. Seasoned it with some garlic and pepper to taste. Then topped it all off with some parmesan cheese.
My sister also made a simple salad with just cucumber, pickled ginger, and caesar salad dressing.
